Alicina y salud
Allicin is an organic sulfur compound extracted from the allium allium of the liliaceae family, and is also present in Onions and other liliaceae plants. There is no allicin in fresh garlic, only allicin and gamma-glutamate-S-allylcysteine.
Alliin is present in garlic in an unstable odorless form. When the garlic tissue is destroyed (such as cutting or squeezing), allicin is rapidly produced by allinase.
Allicin is a variety of allyl organosulfide complex, the main active components are diallyl disulfide (DADS, also known as allicin) and diallyl trisulfide (DATS, also known as allicin).

1. Antimicrobial action
Allicin can inhibit the activity of a variety of microorganisms, including bacteria, viruses, parasites, fungi and so on.
Bacteria include Gram-negative and Gram-positive bacteria, such as E. coli, Staphylococcus aureus, Enterococcus faecalis, etc. Fungi include candida, trichophyton, cryptococcus and so on. Parasites include Plasmodium falciparum, Babesia and Giardia Lamberti. Viruses include influenza B virus, parainfluenza virus type 3, herpes simplex type 1 and type 2, vaccinia virus and vesicular stomatitis virus.
2. Antioxidante
Allicin, allicin and allicin all have strong antioxidant activity. Garlic extract can remove reactive oxygen species such as hydroxyl free radical and superoxide anion free radical, inhibit the oxidation of low density lipoprotein (LDL) and the formation of lipid peroxides, enhance the activities of superoxide dismutase, glutathione peroxidase and catalase, increase the level of glutathione, and improve the antioxidant capacity of the body.

4. Cardiovascular protective effect
Allicin can reduce blood pressure, dilate blood vessels, reduce blood lipids, anti-arrhythmia, reduce oxygen consumption of ischemic myocardium and inhibit platelet aggregation in the intervention of cardiovascular diseases.
On the one hand, allicin can reduce serum cholesterol level by inhibiting intestinal cholesterol absorption, promoting cholesterol conversion to bile acid and accelerating cholesterol excretion, on the other hand, it can also reduce the oxidation of LDL, reduce cholesterol deposition in the blood vessel wall and reduce the formation of atherosclerotic plaque.

At high doses, side effects such as insomnia, vomiting, heartburn, dizziness, diarrhea, tachycardia, nausea, bloating, flushing, headache, mild orthostatic hypotension, sweating, unpleasant body odor, and flatulence may occur.
